A merry Christmas à la Française

This year in France, like in many other countries, Christmas is going to be a very different season. For obvious reasons, it will be a much more intime, somber and likely to be a lonelier affair.

In an attempt to look beyond the pandemic, and shine a brighter light during this Christmas week so severely mutilated, I had the pleasure to interview Héloïse Prieur, a long-standing sympathizer of Passepartout Homes. She is a French language & culture coach living in London, a wine amateur and Founder of BELLE ENTENTE. Héloïse guides us through French Christmas traditions, how to celebrate Christmas “à la Française”.

  • When do French people typically celebrate Christmas?

French people love to celebrate Christmas. As we do not have any other big celebration earlier in the season, such as Halloween or Thanksgiving, Christmas remains the focal point of our winter festivities, alongside New Year’s Eve.
Beyond the religious dimension, it is a family celebration for all, with – in more normal years – family members congregating from all parts of France to be together and start official celebrations on the 24th.

Food-wise, the tradition is to have a big dinner on the 24th December: “le Réveillon” (from the word “réveiller”, which means to wake up).
On the 25th, we reconvene for a Christmas lunch! Or, as it happens in normal years, French people travel, sometimes across the country, to visit another part of the family and celebrate with them.

A perennial question is when to give the presents: some families open their presents before dinner on the 24th, some do it after dinner. It depends on the expected duration of the un-wrapping ceremony and how tired the children could be after dinner! Some do it on the 25th. It is usual, as in many countries, to place the presents from “le Père Noël” (Father Christmas) under the Christmas tree for the children to discover as they wake up.

  • What is a typical French Christmas Day menu?

A typical Christmas meal, like any French formal gathering, starts with an “apéritif”. Usually, a glass of Champagne with some small canapes or aperitif snacks. It is important to remember that, when invited for a meal at someone else’s house, you will not sit at the dinner table immediately. Aperitif, at Christmas especially, is the moment when you reconnect with family members you may have not seen for a while. It is also a moment of anticipation for the feast to come!
Then the “maîtresse or maître de maison” (litt. mistress or master of the house) invites us to sit at the dinner table and the meal can start.
Note that Christmas crackers or hats are not a French tradition. A Christmas dinner table will usually be set as a beautiful tablescape with fine Chinaware and Crystal glassware taken out of the cabinet for the occasion.

The meal starts.

For “l’entrée” (the starter), oysters or foie gras are de rigueur. Smoked salmon with blinis or seared scallops are also beautiful alternatives.

“Le plat principal” (main dish) is usually a roast, with its “garniture” (sides). The “Dinde aux marrons” (turkey with chestnuts) is a tradition but certainly not the only option. Game, beef or lamb… the choice remains yours! The most important point is the conviviality of the dish.

Sides will include vegetables of all sorts, whether roasted or steamed, with usually some accompanying jus. Although there are traditionally less vegetarians and vegans in France than in some other countries, more French people are tempted by these lifestyle choices today. In this case the Maîtresse/Maître de Maison will have made sure the sides are nourishing enough and may prepare something extra for the family members with a special diet.

The “plateau de fromage” (cheese board) comes after the main and before dessert in France. It is usually a selection of hard and soft cheese, served with slices of bread (think brown bread with raisins, nuts or figs…). It often comes with a small portion of green salad.

Can you imagine that, after all this, we need to have some space left for dessert?

  • What are your favorite French Christmas desserts? Is there one you serve every year?
    The traditional French Christmas dessert is “La Bûche de Noël” (the Christmas log). To me it is not the finest expression of French patisserie – although some extremely fancy creations are now put forward by famous pastry chefs. I think its long-lasting popularity comes from the little decorations which ornate the cake itself: from humble little plastic figures to the most refined pieces, the Bûche is a landscape, an imaginary theatre, which brings out our inner child. My personal favourite dessert after such a heavy meal would be to offer a selection of sorbets, maybe lemon and blackcurrant served with a traditional biscuit called “langue de chat”. Especially if this is your Christmas eve dinner and you are planning on having another gathering, with another festive meal, on Christmas day!

  • You are a wine amateur and have been working with famous Chateaux yourself. What would be your French wine pairing advice for such a meal?

Champagne for the aperitif of course! When drunk on its own or just over canapes, I personally like it very mineral and Chardonnay dominant, such as a Ruinart Blanc de Blancs or a Moet et Chandon millesimé (vintage), just to name the most famous. I also like, as an aperitif, an ultra-brut cuvee (zero sugar) to start the festivities and open our appetite. This year, for instance, we will have a Laurent Perrier Ultra Brut!


Foie gras needs a sweet white wine, “un vin liquoreux”. The most prestigious pairing is with a Sauterne (an appellation which features many “grands crus classés” like Château D’Yquem, Climens, Suduiraut, Rieussec, Filhot…), but there are also other fantastic options from the French South West, such as a Montbazillac for instance.

Smoked salmon and seafood in general pair well with Chardonnays from Burgundy such as a Chablis or other appellations from the amazing Côte de Beaune: Meursault, Puligny-Montrachet, Chassagne-Montrachet, to name just a few.

With Oysters, I would recommend a dry white wine such as a Sauvignon from the Loire valley.

After the Champagne and white wine, the roast is the opportunity to share a beautiful red, for which French are spoilt for choices. Depending on the type of meat, a nice Bordeaux (the choice of regions and appellations is immense: Pauillac, Margaux, Grave, Saint-Emilion, Pomerol, Saint-Julien…), Burgundy (Pommard, Nuit Saint-George, Chambolle-Musigny…) or Rhône (Chateauneuf du Pape, Côte-Rotie, Saint-Joseph…) will be a festive choice. It is a matter of personal taste but I would choose a Rhône with game, Bordeaux or fine Burgundy for beef and probably a Burgundy with poultry.

Then comes the cheeseboard. Cheese is often thought to be best paired with red wine. It is actually often risky to do so, as some cheese will absolutely ruin a red wine. I would preferably go with a full-bodied white from the Rhône or Languedoc to accompany the cheese board.

This may seem like a long selection but a Christmas meal may last quite a few hours so there is ample time to pace yourself and drink responsibly!
And of course we will have more intimate festivities this year, but let’s hope we can revive all these traditions in a not-too-distant future.

Recipe of the Week – Tuscan Stuffed Duck

Tuscan stuffed duck is a typical dish from the areas of Siena and Arezzo.

Our Homeowners, Chef Francesco and Patrizia, from Podere Vetrichina in Tuscany, share with us this scrumptious Christmas recipe.

Tuscan stuffed duck

Duck has been bred in Italy for at least three centuries. Eggs are also appreciated from this animal, although ducks are mainly considered for their meat: reddish and a little fatter than chicken, it is excellent roasted and traditionally combined with fruit such as citrus fruits, cherries, chestnuts.

To cook the whole duck, you need to calculate 1 hour and then about 30 minutes for each kilo of weight. For the breast, it is a matter of taste, but it is generally preferable not to overcook it, a bit like a good steak.

Recipe Tuscan stuffed duck.

Ingredients for 4 people:

  • 1 Boneless Duck Of 1500 G
  • 50 G Butter
  • 100 G Pork Loin
  • 2 Chicken Livers
  • 30 G Lard
  • 1/4 onion
  • 1/2 glass of dry white wine
  • 1 Sprig Rosemary
  • 1 Pinch Mixed Aromas For Roasts
  • Olive oil
  • Salt
  • Pepper

Method:

Brown the minced chicken livers, duck liver, lard, onion and loin with a little less than half the butter and a little oil, season with salt, pepper and spices; sprinkle with a little wine and stir. Stuff the duck belly with the mixture; sew the opening and tie it so that the wings and thighs are brought closer to the body. Brown the duck over high heat with a little butter, a little oil and rosemary, add salt and pepper and continue to cook it in a hot oven, adding the wine halfway through cooking.

Lecce: artistic and culinary treasures

Deep into the heel of the Italian boot lies a wonderful Apulian gem–Lecce, the heart of the Salento area famous for its pristine beaches and remarkable culture.

The land of olive groves and ancient “masserie” is especially popular for its very own interpretation of the Baroque architectural style of the late 16th-century, the “Barocco Leccese”. Sought after for its churches (there are more than forty!), piazzas, small courts and noble palaces, Lecce is also home to a Roman amphitheater dating back to the Augustan age.

Flowers, fruit trees, cherubs and animals co-exist jubilantly in the chiseled old town. The tender local stone (called “pietra gentile”) gives Lecce an astonishing white colour during the day and a rose gold tint at dusk. In addition to stone processing, the city also excels in the production of papier-mâché.

However, Lecce is not just this! The chalk-white old town blends in effortlessly with the vibrant colours of the city’s suburbs, which have held international graffiti festivals in recent years. These have transformed the outskirts into authentic open-air museums.

AVIO, a coffeeshop near the castle, offers the best “caffé Leccese” in town, served with ice and almond milk, as well as the traditional “pasticciotto Leccese”, a heavy pastiera cream-filled indulgence.

Lunch at L’Arzilla Furcina, a typical Salentine trattoria, is something special like lunch at grandma’s place. But you can only go if you are a good fork… “una buona forchetta”. Here you will only find genuine products from the garden. It has a cosy atmosphere and beautiful tables with Salentine cementine tiles.

Salento is an area rich in colours and flavours, as can be seen in the dishes of DUO Ristorante. The perfect dinner spot after a long day of sightseeing. There a few new norms when travelling within the EU. For example, it’s an obligation in Spain to wear a face mask when you are out of your rental car or villa, and unable to maintain the required social distance of 1.5 metres, for example when shopping in the supermarket or going into a retail boutique.

Yet guests will notice that social distancing is easily achieved when enjoying a villa holiday in Spain.

Firstly, in sunny Andalucia and the Balearics, it’s the norm to dine outside on terraces and courtyard patios – enjoying the fresh air of the Mediterranean.

Dining capacity has been increased to provide extra space between tables. Menus are digital, accessed via your smart phone. Sanitising gel is widely available and levels of hygiene within the hospitality sector is higher than ever, with regular inspections.

Andalucia and the Balearic Islands also have a wealth of outdoor activities to enjoy privately with tour family, from wild swimming in refreshing crystalline rivers, and hiking, to gastronomic activities like wine tastings and private cooking classes. 2. Ischia Torre dell’Aquila – Island Retreat
At Passepartout, we always look out for the extraordinary, the unique, the unexpected. That´s why clients love Ischia Torre dell’Aquila, on a secluded volcanic island 30km off the coast of Naples. Set over 3 floors and marrying Italian architecture with modern aesthetics and local materials, this modern home filled with light is crafted from the volcanic stone of the Ischia. This unique home resembles an ancient watchtower with its unique circular design yet has plenty of contemporary style. In fact the villa has been remodelled by Italian architects, Purini and Mariani, who have collaborated with the film director, Rosselini. The villa has also been featured on the cover of the Italian interior magazine ‘Ville & Casali’ – it really is picture perfect.

Torre dell’Aquila

Secluded location, private orchard, and a fabulous position in the Bay of Naples make this property something really special. With 4 bedrooms and 5 bathrooms, Ischia Torre dell’Aquila is more than comfortable for families and groups of up to 10 guests. 3. Masseria La Raganella Celeste – Modern Masseria
This sparklingly contemporary interpretation of a rural idyll can be found in Puglia. We adore this corner of Spain. Its achingly beautiful, undeniably authentic and the climate is glorious.

We chose Masseria La Raganella Celeste as it is without a doubt among the most sophisticated and unique properties in Salento. It sits in a secluded, centuries-old olive grove, only 10 minutes’ drive from the Mediterranean. The masseria is a perfect mix of contemporary design and traditional local craftsmanship.

Perfect for large groups, retreats or a multi-generational family holiday, this striking property can accommodate 14 guests with 6 bedrooms and 5 bathrooms.

La Raganella Celeste

The façade – traditionally painted in white with exposed features in the local stone, Pietra Leccese – reflects the bright, natural light of the Salentine summer, whilst inside traditional vaulted ceilings blend perfectly with the contemporary Italian interior design. Seeing is believing.

4. Villa Peduzzi Como – Lakeside Sophistication

Italy´s lakes are one of the country’s most spectacular destinations, and when it comes to natural beauty and Italian sophistication then nothing beats Lake Como. This is where you´ll find Villa Peduzzi Como, one of the area’s most fabulous homes.

This liberty-style villa has been fully restored with all finishes exceeding the highest of standards. The villa comfortably sleeps up to 18, (that´s 7 bedrooms and 11 bathrooms, with additional children’s beds available). Villa Peduzzi Como is a one-off, a property that will transform a family gathering, retreat or special occasion into a truly unforgettable experience.

Close to the villa is a 22-metre, heated infinity pool with jacuzzi offering 180-degree views of Lake Como. The pool house offers a kitchen, island bar, and comfy seating area. There are 2 additional alfresco dining areas near the pool house.

Peduzzi

For guests planning a retreat, then this property is ideal, as it has its own yoga/wellness facility carved out the cliff-face, featuring an expansive room with stunning views of the lake that can accommodate up to 8 yoga practitioners. It also includes an area for gym equipment from Technogym including a Kinesis cable weight training system, a rowing machine, an exercise bike, dumbbells, stretch bands, and exercise balls. It also includes an ensuite toilet, steam room, and shower.

5. Casa Olivi – Quintessential Italian
Found in the heart of Italy, Casa Olivi is all you could want for in an Italian farmhouse reimagined as a luxury rural enclave. Casa Olivi embodies the quintessential combination of the best of Italy from tradition to Italian design.

Casa Olivi can sleep up to 11 guests in 5 bedrooms. There are 4 bedrooms within the villa (3 doubles and one triple) and an additional double bedroom in the independent guest house. All bedrooms feature ensuite bathrooms and are air conditioned.

Casa Olivi

The exterior of the villa remains true to its origins from its days as a farmhouse when the property was owned by Giovanni Olivi (1865-1923), while its interiors have been reimagined by Swiss architects Markus Wespi and Jérôme de Meuron. Autumn in the Algarve

Inspiration for your best seasonal get-away ever

The Algarve is undoubtedly one of Europe’s finest golf and beach destinations. Yet there is surprisingly more to captivate the visitor, and there is no better time to discover this beautiful south facing coast than in early autumn.  This is the season to indulge in authentic gastronomy, discover a fascinating cultural heritage away from the summer crowds, whilst staying at some of the best properties in our portfolio.

The coast spectacular, not only sandy beaches, but impressive coastal hiking routes, as well as a wealth of activities from boat trips to snorkelling adventures. If you head a little inland through orange groves and cork forests, you’ll find lovely local towns with bustling markets.

Faro – the gateway to the Algarve

Faro, the regional capital of the Algarve is enjoying a renaissance thanks to its authentic ambiance, charming local eateries and relaxed café culture. The coast around Faro is amongst the most unspoilt of the Algarve, yet it is also conveniently close to the international airport, superb golf resorts and the protected Ria Formosa Nature Reserve. Casa Fuzetta – Olhão, Algarve – Groups & Retreats 

To the east of Faro, about 20 minutes transfer from the airport is the town of Olhão. The town has a wonderful farmers’ market and fresh fish market, as well as some authentic local restaurants. Olhão is also the gate way to the remarkable Ria Formosa Nature Reserve and also some of the finest beaches on the Algarve. It’s here you will find Casa Fuzetta, the perfect place for your next retreat.

Feel immersed within Portuguese charm, at this spectacular 12-bedroom, restored property in the heart of a whitewashed Algarve fishing town. In addition to the spacious guest rooms, each with a private ensuite bathroom, Casa Fuzetta boasts an impressive rooftop private heated pool and pool bar, an enthralling place to relax in the sun, with views out across the town. The rooftop yoga decks have a capacity for an instructor and up to 16 participants.

A taste of the Balearics

Our guide to making your island getaway the most delicious holiday ever

We adore the Mediterranean whatever the season; although really, it’s the quintessential summer escape.

For a sophisticated slice of island life, choose the Balearics, the sun-drenched Spanish archipelago that offers beautiful villas and country estates; wonderful coves and bays with stunning beaches; clear, aquamarine waters; and sensational food & wine.

  • Formentera

Formentera

This chic, boho style island is a real discovery. It’s a short boat transfer from Ibiza, but worlds-away; a corner of the Caribbean in the Mediterranean. Think white sandy beaches, an incredible clear, azure sea; unique, quirky hippie markets, and super beachside restaurants.

‘Villa Mariana’
We’ve found this fabulous contemporary villa that captures the tranquillity and beauty of the island of Formentera. It’s set within pine woodlands, with a fabulous pool and garden.
With 4 bedrooms and 4 bathrooms it can comfortable accommodate a large family or group of 10 friends.

You can opt for a private chef too, who will prepare mouth-watering feasts using high-quality ingredients from the islands – organic vegetables, fresh local seafood and fish, and pair the dishes with refreshing local white wines.

  • Villa Mariana

It’s easy to get around diminutive Formentera – you are never far from a stunning cove, sophisticated beach clubs and relaxed beach bars.
Called chiringuitos, the seaside restaurants offer a more mellow and relaxed vibe than neighbouring Ibiza. You can choose a hippy style, like Piratbus, on Playa Migjorn, close to the villa.
Or choose something decidedly more upscale, like the famous ‘Juan y Andrea’ chiringuito. Founded in the 70s by the husband and wife team, this restaurant is found on the fabulous Illetes beach and is popular with the superyacht set, as well as foodies that enjoy the fresh fish and superb wine list.
Since the Balearics are Spanish, expect lots of family friendly restaurants too, where you call can kick back, relax, and eat well.

Dining out in the evening can be a real treat. A favourite is Can Dani, just a short drive from Villa Mariana. Here creative fine-dining cuisine is matched by the elegant surroundings.

Choosing Villa Mariana means you have all the joys of island life on your doorstep, as well as having you own secluded oasis. It’s the perfect place to relax in the Balearic sunshine – by the pool or in the shade on the love seat in the Balinese-style cabana overlooking the pool. And for those looking for a bit more solitude and an ideal place to relax, will find an additional Balinese cabana within the garden complete with comfy sofa seating.

Ibiza

The White Island needs little introduction. Its music culture is world-class and offers visitors a compelling mix of a sophisticated nightlife and secluded, ultra-luxury villas secluded amongst the Ibiza’s pine forests.

‘Villa Cala Salada’
This striking contemporary villa is built on 4 floors, offering guests panoramic views of the Mediterranean Sea and of course the opportunity to take in Ibiza’s celebrated sunsets from the terraces.

With 5 bedrooms and 10 bathrooms, this villa offers plenty of flexibility with accommodation.

  • Villa Cala Salada

Ibiza has a surprising diversity for visitors. If you want to party and enjoy an extravagant holiday, then it’s all there. The legendary clubs and music venues of Ibiza are close by in San Antonio.

You can also dine out at the world’s most expensive restaurant, ‘Sublimotion’ – the most extraordinary culinary performance experience – close to Ibiza Town’s famous Playa d’en Bossa.

Yet if you want something more laid back, then Villa Cala Salada is just perfect for a yoga or wellness retreat, or for guests looking to enjoy the amazing natural environment.

There are two pools, with sea views and a hot tub or 6 people.

Guests can enjoy a hearty breakfast which is included each day, and for retreats then a chef is available as a bookable option.

Alternatively explore the island’s villages and hamlets for interesting places to eat like ‘Sa Soca’ just outside San Antonio. It’s a family run joint that offers traditional, home-cooked food all year round.

For the adventurous head up to Bambuddha, the famous Asian fusion restaurant in the Ibizan hills where the food and atmosphere will transport you to Bali.

Villa Cala Salada gives guests the very best of Ibiza, from its privileged location, proximity to great nightlife, and facilities that are perfect for large groups on retreat or an extended family looking for a destination with something for everyone.

Menorca

Menorca is so often overlooked in favour of her more popular sisters. Yet this rural island is probably the most authentic. In addition to beautiful coves and sandy bays, Menorca offers verdant rolling countryside as well as the attractions of the charming historic port cities of Mahon and Ciutadella.

  • Cala Macarelleta – Menorca

‘Prestige Menorca’
For the most memorable holiday we recommend ‘Prestige Menorca’, a spectacular home within a 250 acres estate. This is a full-service villa offering the facilities and amenities of a luxury boutique hotel. A dedicated in-house concierge team are on-hand to take care of your needs, both prior to and during your stay.

This 11-room, 11-bathroom property, with stunning 180-degree sea views, is set in extensive grounds. Guests will love The White Company London linens, towels, bathrobes and candles; as well as the L’Occitane bathroom amenities.

  • Prestige Menorca

Even more delicious is that there is a chef on-site, so guests staying a week can expect a tasty breakfast served daily, as well as 5 lunches and 5 dinners.

The capital of Mahon is not far away, so make sure you visit the city’s tempting produce markets. Menorca is all about slow food – natural, local artisan food, like cheeses and organic vegetables and sustainable meat.

‘Can Vermut’ is a favourite place to enjoy tapas close to the harbour in Mahon. Try the tasty ‘sobrasada’ sausage which is a local delicacy.

If you head to the other side of the island, to the historic former capital of Ciutadella then you will discover a myriad of bars and restaurants. ‘Cas Ferrer de Sa Font’ is the place to go for authentic Menorca gastronomy. The kitchen sources locally, supporting the island farmers. You’ll also find some excellent seafood dishes here too.

Menorca Prestige is perfect for those looking for a private property with the facilities of a boutique hotel. For example, there’s a 26-meter outdoor heated pool set in manicured landscaped gardens; and a superb gym. Equipment includes treadmill, bike, rowing machine, as well as free weights etc). There is a massage treatment room too, and personal trainers, nutritionists, therapists, yoga and Pilates instructors can also be arranged.

Mallorca
The biggest of the Balearics, Mallorca has become the Michelin star dining capital of the Balearics, with 8 stars. ‘Zaranda’ has an impressive two stars; whilst Mallorca is also home to Mac Fosh’s eponymous restaurant. Found in Palma, the capital, Marc Fosh has 1 star. Interestingly the Marc Fosh is the only British chef to have been awarded a Michelin star in Spain.


So, the Balearics are most certainly amongst our most tempting of destinations – islands where you can indulge in both fabulous accommodation in unique villas and eat incredibly well.
