Destination: ItalyOur PartnersRecipes Crostini Neri – the original Tuscan recipe by Paola Fiocchi Van den Brande April 10, 2023 written by Paola Fiocchi Van den Brande The origins “crostini” dates back to ancient times, when the dining table was not laid with single plates, but the food was served on large trays from which everyone would take what they desired and place it directly into their mouths, or if necessary placing it on a piece of bread.This use continued until the end of the XVII century: if you look at the paintings that represent the opulent banquets of the Renaissance, you will notice that the tables were very unrefined.The piece of bread gathered oils, sauces, various pieces of meat, becoming very tasty and flavoursome.These were the ancestors of our crostini; pieces of bread covered in a minced meat of humble parts of the animals.As the bread was usually quite hard (in fact it was made only two or three times a month), it was firstly used toasted and then soaked in broth or in wine to make it edible. For many years the chicken livers on toasted bread has been a “must” in the starters on nearly all Tuscany tables. They are prepared with many variations and it is very rare to taste two the same.Typical during all the festivities, this is my grandma’s version:CROSTINI NERI – THE RECIPEIngredients for 6 serves:500 grams of chicken liver6-7 sage leaves5-6 anchovy fillets1 tablespoon capersbutter½ glass of Vinsantovegetable stock250 g white breadsalt and pepperextra virgin olive oilClean the chicken livers by removing the long white strands and blood and rinse under running water until clear.Braise the chopped onion in some extra virgin olive oil and one teaspoon of butter. Add the sage leaves and the chicken livers and braise them until they are pink inside.Add one tablespoon of Vinsanto and when it has evaporated, add a bit of vegetable stock, salt and pepper.Simmer for at least 15 min.When cooked, add the anchovy fillets and capers , chop finely with a mixer.Taste and add salt and pepper and a splash of vinsanto if necessary.Roast small bread slices, spread the mixture and serve. As more and more people become aware of the impact of human activity on the environment, responsible travel and eco-tourism are becoming increasingly popular. This can be true also for Guests who book a holiday villa as they are often offered the resources and means to make a significant impact on the local environment. Here are 9 ways in which Guests can act responsibly and take eco-friendly measures when staying in a villa rental. A reminder to treat our planet with care on World Earth Day on April 22nd. Use water responsibly Water is a precious resource, and it’s important to use it wisely. You can preserve water by taking fewer or shorter showers, taking showers instead of bath and turning off the faucet when brushing your teeth. You can also run the dishwasher and washing machine only when full. Don’t forget to report any leaks or drips to the villa staff, so they can be repaired promptly. Guests can also consider re-using towels, and request less frequent bedlinen changes. Save electricity and gas Guests can save energy by turning off lights when they leave their bedroom or the house. As mentioned in the point above, you should run washing machines and dishwashers only when necessary, consider washing clothes and linen less frequently and, weather permitting, dry clothes outdoors instead of using a dryer. Electronics continue to consume energy even when they are turned off, so it’s important to unplug them when they are not in use. Guests can also use power strips to make it easier to turn off multiple electronics at once. In winter, set the thermostat to a moderate but comfortable temperature or try and lower it by a couple of degrees and wear a thicker layer instead; try and lower the thermostat during the night, if you leave the house for many hours or if windows are often to refresh the rooms. Be mindful of the use of air conditioning. Air conditioning can consume a significant amount of energy, and guests should avoid abusing it by setting the temperature too low, leaving it on when they are not in the room or leave windows and doors open when the units are still running. When available, you can also make use of fans, open windows, and allow natural ventilation to cool down the villa instead of relying solely on air conditioning. By being mindful of your use of air conditioning, you can further reduce the carbon footprint and contribute to a more sustainable villa rental experience. Reduce, reuse, recycle Guests can reduce waste by bringing reusable water bottles and shopping bags with them, by avoiding single-use plastics and products with excessive packaging. You must also recycle whenever possible and dispose of waste according to the local regulations. The Villa Manager is usually at hand to answer any query regarding the local recycling programs. Use environmentally-friendly products Many cleaning products contain harsh chemicals that can harm the environment. Guests can use environmentally-friendly cleaning products to minimize their impact on the environment. If Villas provide household items, ask the Villa Manager to ensure they are eco-friendly. Another way for guests to make an impact during their stay is by using eco-friendly sun creams. Traditional sun creams often contain harmful chemicals that can damage coral reefs and other marine life when washed off into the ocean. Guests can opt for sun creams that are biodegradable and reef-safe. Look out for the label “Reef Safe” on the packaging. These type of sun creams are also better for your skin, as they are often made with natural ingredients that are less likely to cause irritation or allergic reactions. Use public transportation, walk or cycle Guests can reduce their carbon footprint by using public transportation when available or walking/cycling whenever possible. If a car is necessary, you may want to consider renting an electric or hybrid vehicle. Ask the Villa Manager if it is possible to re-charge the car at the property and what the electricity cost may be. Respect local wildlife and habitats Guests can be mindful of the impact their activities may have on local wildlife and habitats. Purchase local products Supporting local businesses and purchasing local seasonal products can help reduce the carbon footprint associated with shipping goods from far away as well as supporting the community who may rely on tourism to thrive. Shopping at weekly farmers markets and independent boutiques rather than at large chains is an excellent way to get to closer the locals, learn about their culture and way of living whilst contributing to their livelihoods. Leave no trace Guests can leave no trace by packing out all trash and holding on to it until it can be disposed in a responsible way, preserving the environment especially in vulnerable areas. Wondering what it is? Or who is he, or where it may be? Happy to introduce you to something uniquely and exclusively located in the Italian Alps, in the region of Lombardy. A ‘crotto’ is a type of traditional restaurant found in the norther part of the Lombardy region of Italy, particularly in the Valchiavenna area of the province of Sondrio. Valchiavenna, whose main town is represented by Chiavenna, is easily reachable from Milan and Bergamo airports and is located just a stone’s throw away from Lake Como. The word “crotto” comes from the local dialect and refers to a natural cave or grotto that has been converted into a rustic taverna. Pizzoccheri Chiavennaschi at Crotto Quartino In a crotto, visitors can enjoy traditional local cuisine, including dishes like ‘pizzoccheri valtellinesi’ (a type of pasta made with buckwheat flour and served with potatoes, butter, cheese (plenty of), and cabbage), ‘pizzocheri chiavennaschi’ (tiny white handmade gnocchi seasoned with butter, sage and garlic), ‘polenta taragna’ (polenta made with buckwheat flour and cheese), and sciatt (deep-fried cheese balls). Meat and fish lovers will be served grilled meat, ribs and local sausages or trout. Crotto Ombra Crotti are scatterd in the hills and mountains surrounding Valchiavenna, many offer spectacular views of the surrounding landscape, valleys and vineyards. The cool, humid conditions inside the natural caves make them ideal for storing wine, so many crotti also serve a range of deep red local wines such as Sassella. Crotti offer visitors a unique and authentic dining experience, with a rich but delicious local cuisine served in a traditional Alpine setting. Guests will enjoy the simplest and most traditional Valchiavenna dishes served in an original establishment that promises an authentic and memorable experience. Unmissable are the valley’s bresaola (cured meat), the pizzoccheri both in chiavennasca and valtellinese style, and the mixed meat or fish cooked on the griddle – alla piotà. There are no Prada or Armani stores nor Michelin star restaurants, although there are some which arguably deserve a star or two. Lecce is more about authenticity, farm-to-table menus, slow living and simplicity. I had the pleasure of sitting down with Margherita Caputo in front of a plate of pasta with fresh tomatoes and zucchini. She is an architect who lives not far from Lecce and is Property Manager of Masseria Mauriani in Carpignano Salentino.Margherita walked me through her favourite shops in Lecce, the ones not mentioned in the tourist guides, of course! Ijo’ Design The brand was found by Margherita’s childhood friend, Annalisa Surace. Annalisa creates contemporary and stylish artisanal apparels and accessories using local textiles: coats, scarfs, dresses as well as cushions or jewellery in natural materials and neutral color palettes. Showroom: via Palmieri n. 47-49 in Lecce. Ijo’ Design is also in Ostuni. Artefatto L’Idea in Terracotta Angelo creates artifacts and decorations in terracotta and majolica taking inspiration from the colours, sounds and perfumes of Salento. His ceramics are fun and colourful and include murals, kitchen utensils, key rings, house number tags, pottery, plates, photo albums and much more. His laboratory is definitely worth a visit. The shop in Lecce is now permanently closed but you can still visit the one located in Castro, Piazza del Vescovado 2. Re di Quadri Re di Quadri is the shop to go for original and refined artisanal artifacts; a store where you can take home traditional furnishing such as the ’pumo portafortuna”, a lucky charm ceramic knob which comes in various bright shiny colours. The Pumo or Pomo is a traditional Apulian artisanal artifact originally from the town of Grottaglie and represents a rose bud about to bloom, symbolising something coming to new life.The Pomo is traditionally offered as a good luck omen to someone starting a new business, moving into a new home, starting something new in life. Shop: Re di Quadri, via Vittorio Emanuele II 66, Lecce. Paola Barrotta Hand-made original contemporary jewellery for both men and women. A third-generation goldsmith, Paola worked in Rome, NY, Bologna and Lecce for major companies where she could put her Italian craftsmanship at the service of international maisons. In 2004 she opened her first studio/concept store in Lecce, where you can experience goldsmiths at work. You will not only find local plants such as a large variety of fig and other fruit trees, but also flower pots in stone as well as home-made products such as marmalades, jams, various types of preserves, legumes, dried figs, durum what pasta by Senatore Cappelli, “friselle” and other Apulian delicatessen. Liberrima An independent book store, a wine and food shop, coffee bar and All’Ombra del Barocco wine bar and restaurant located right at the heart of the old town in Lecce, steps from the Cathedral and Piazza Sant’Oronzo. Under one roof you can wander among books, have a coffee scrolling through magazines and papers, buy wine and local delicatessen or sit down for a slow-food Apulian meal. The book shop is stocked with a vast selection of books for adults and a rich dedicated section for kids. The wine shop offers a comprehensive list of Apulian and Italian wines whilst in the grocery store you can take home sweets, “taralli”, “frise”, pasta and extra virgin olive oil. There are regular events held at Liberrima, hosted both in the restaurant and in the book store, from workshops to meetings with prominent Italian authors.
